My first attempt at choux pastry profiteroles wirh lemon cream and there is chocolate ginger sauce on the side

I have say its a horrible pastry to make because its like a very thick batter and too wet it wont hold too dry they are heavy. My first mix was too runny so l started again and dropped an egg from the recipe and it worked better. Its surprising how different chefs or cooks all have different measuremet for their version of the same recipe.
